If there is one thing I love more than sprinkles, then it would probably be Mexican food. My weekend started off on a high note, as a few college friends came to town for the 4th of July and we made plans to hit up our favorite Mexican restaurant. (I realize tacos & queso are probably not your typical 4th of July cuisine, but hey, this place was worth skipping barbecue for.) Since a lot of restaurants around here are closed for the 4th and we were making a 20-minute drive to the restaurant, we called the day ahead to make sure they were open (to which they said yes). Because what would be worse than getting our taco hopes up, only to have them crushed when we arrived to a closed sign? Well, I can now tell you what is worse. Actually driving there on the 4th only to find a “Closed on the 4th of July” sign taped to the front door. If there was an emoji for our faces, it would have looked like a sobbing, slightly angry, confused woman face-down in a bowl of empty queso. Not dramatic at all.
We had multiple theories for what may have happened, but I’ll spare you the lengthy list for today. We ended up finding another delicious place for dinner, and all was well in the world again.So in commemoration of our chips & queso mishap, I figured I would make something to liven the mood a bit. Because doesn’t everyone de-stress by making Sprinkle Nachos? To you they may just look like yellow triangles, but to me, they are nachos. (This may be the stage when the obsession is out of hand.) My sister said they were weird, but I’m 100% okay with weird.
Fill them with your favorite sprinkles or candy and set out a big bowl of them at a party. Allow your guests to decorate their own cupcakes, or just give them a few to take home as party favors. Or if you’re going for a full fiesta, pair them with these taco score cards!

Who said you couldn’t pair nachos with sprinkles? I don’t know about you, but I’m thinking sprinkle tacos are in order next. Not exactly sure how that’s going to work, but I’m sure I’ll figure it out.
