Hey Meghan! Were you using a hand mixer or stand mixer? It is a thick consistency for the first few minutes and doesn’t seem like it’s going to come together but you just need to keep beating it for a few minutes. Stand mixers are easier and quicker, hand mixers take more time and patience. If after a few minutes it doesn’t start getting fluffier, add 1-2 teaspoons of milk to help it thin out and it should start getting fluffier.

Making sure your butter is room temperature or soft will also affect how quickly this comes together, if it’s too cold, it would be more of a soft clay consistency at first.

I never ever ever rate lower than 4-5 stars on recipe blogs – but I could NOT get this recipe to come together. The texture was not fluffy or light. It had the texture of sugar clay – I know this is user error but I was just wanting to hopefully troubleshoot what went wrong!
