You are 100% right most of the flavor does bake out. I will be remaking this recipe with way more lemon extract.

Yes you can! Bake at same temperature but it just might take longer; test with a toothpick for doneness!

Made it and got pretty close to perfection! I used Watkins lemon extract and wanted a strong lemony taste. Tasted the batter after 1 Tablespoon and decided to add another Tbs but boy that was a mistake! After baking, It was too overpowering and had a heavy chemical alcohol aftertaste—I guess you would call it Pine Sol, despite my never tasting that.
Mine cooked in 50 min at 325, the texture was great, so much so that I would try again for that reason alone…only I would skip the Watkins next time!
