That should work just fine! They may not spread as much during baking as they would with soft dough, but other than that, I’d say you should be good! Also, if you bake them frozen, you will probably just want to bake them 1-2 extra minutes.

I am trying to find cookie recipes that I can make ahead into dough balls and then freeze so that it will lessen my Christmas baking load. Do you think that these would be good for that? Thanks!

Oh, yum! White Chocolate Reese’s would be so good! Since they would probably melt faster than normal white choc. chips, I would try baking half of the dough with the Reeses mixed in, and then try the other half with the chopped Reese’s pressed into the cookies after baking. Either way, I think they would turn out delicious! Be sure to report back & let me know how it works! I’m going to have to try WC Reeses, such a good idea!

I live in the Scotland and have been fortunate enough to get some some Reeses mini white chocolate pb cups. Thinking that a handful of quartered cups could be a delicious sub for the white chocolate – what do you think?

This comment made my day! I’m so glad you loved them as much as I did & thank you so much for reporting back with how they turned out for you! And dark chocolate sounds SO good (now I want to make more of them with dark chocolate!). Any excuse to make these again is fine with me :)

I saw this recipe and new I wanted to make it. I followed the recipe exactly, except I used dark chocolate instead of white chocolate. They came out SO delicious. Just like you said – the perfect blend of chewy/soft/a little crisp in all the right places, and not at all doughy. Will be keeping this recipe forever!
