In reply to Mo Thomas. Hi Mo! I'm not very familiar with double cream, but I believe it's a little different than heavy cream in that it may have a higher fat content. It may be worth a try, although I can't say for sure how it would react in this recipe.

Is your heavy cream “double” cream in the UK? How would you heat it without curdling it?
